Caffeine is removed with ethyl acetate from sugarcane — a gentle natural method. 0.1% caffeine stays, along with all the caramel sweetness.
How to brew
Espresso
18 g in, 36 ml out in 27–30 s, water at 93 °C.
Drip machine
60 g per litre, medium grind.
Pour-over
15 g per 250 ml, 93 °C, about 3 minutes in total.
French press
30 g per 500 ml, coarse grind, 4 minutes.
Moka pot
Slightly coarser than espresso, warm water, medium heat.
