A co-op at 2,100 m; cherries are hand-picked and washed in running water. We roast light to keep the jasmine and stone fruit.
How to brew
Drip machine
60 g per litre, medium grind.
Pour-over
15 g per 250 ml, 93 °C, about 3 minutes in total.
AeroPress
15 g per 220 ml, 85 °C, 1:30 and a slow press.
